It would have been better if you had booked your return train from Jalgaon instead of Delhi. Jalgaon is closer to Ajanta and you would have saved time traveling to Mumbai.

I would suggest the east coast Kolkata- Chennai. Chilika Lake, Konark, Araku Valley, Vishakapatnam etc are places that you can consider.
