As far as I know the European Central Bank will stop issuing new 500 Euro notes at the end of 2018 but those already in circulation will remain legal tender. Some money-changers in India may have misunderstood this as imminent demonetisation and stopped changing them, but I don't see why banks and other official money-changers would stop accepting them.
