Do you need train information?
If you're doing the journey just mostly for the heck of it, and can't find suitable direct trains, I'd seriously consider doing it by whatever daytime hops you can find (doing so in Unreserved and so basically getting on as you like, or sneaking in on Sleeper Class and seeing where it gets you -- worst thing that can happen is you'll likely be sent back to Unreserved, provided you have a ticket for it, of course --, could be fun even).
If you have say a week or one and a half going to and fro, this ought to be a fun journey. Properly seeing wherever you land up, one could devote weeks to this. Full trip reports expected, mind

My 2 cents...
As Steve says the train journey from Bangalore to Mangalore is scenic. You can take the day train#6517 for this journey.
Then stay overnight at Mangalore
(To save time, alternatively you can take an overnight bus from Bangalore to Mangalore which reaches Mangalore very early (like 5AM))
Then...
Take the morning train... I've taken the morning passenger to Goa (KR2) several times and loved it http://erail.in?T=MAQ::MAO:
You can also take the 5AM train from the timetable above.
Rajdhani is not the best for this travel as you will not get the feel of Konkan railways from inside an AC coach.
I've found the Goa to Madgaon section to be better on the Konkan railway.
You could even stay a day or 2 in Goa... Cancona station is very close to Palolem beach... Other options on the way are Gokarna Beach (from Gokarna Road station)... Malpe from Udupi station... or Maravanthe beach from Kundapur station
From Goa you can take the Janshatabdi or some similar day train...
Then travel back via standard route to Bangalore
You should plan for 4-5 days for this trip...

Booking you'd do (as well in time as you can, booking normally opens 90 days ahead. And remember Mumbai-Goa is an obviously popular route, so easily books out) at http://www.irctc.co.in/; if you can't figure it out, have it done for you for a small fee at either http://www.cleartrip.com/ or http://www.makemytrip.com/.

Also try using cleartrip as mentioned previously. Their interface is a lot less confusing and they charge very nominal fee as well.
