BTW, this year has been a good year for Mangoes. Abundant fruits, multiple varities, and for the first, an affordable organic alternative as well in Bangalore even though we came to know about them pretty late in the season.

We stocked up on Mango pulp and Mango pickles for the winter.
Made some thokku yesterday.. Please share some recipes for semi-ripe mangoes.. Have been getting some unusually good fruits in our farmers market this summer..

Semi-ripe mangoes are especially great for Mango Pachadi. It is made with semi-ripe mangoes, chillies, jaggery, and tempered mustard seeds. My granny's favorite dish during the season. Let me check with my mom for the recipes.

I also have a preference for the slightly sweet, slightly-sour taste that a semi-ripe mango imparts to cut mango pickles. Fairly straightforward to do it. Dry roast a tsp of fenugreek seeds and 2-3 red chillies and powder it finely. Cut the mangoes into 1-1.5 cms sized chunks. Temper mustard seeds in 2-3 tsps of Gingelly oil, add 1 tsp of chilli powder and a pinch of Hing to it. Now, add this to mango, mix the roasted powder, and toss it to coat evenly. Make sure you toss it once daily. Can be had immediately or tastes much better if had in a few days time. Freeze it for longer use beyond 2-3 days and can stay upto 2-3 weeks depending on the qty of oil used.

I used eat a lot of 'Tamarind tokku (hunisekaayi tokku in Kannada )' during my school days. Lot of stores in Bangalore stock this. But they aren't half as tast as my friend used to make it with freshly plucked raw tamarind.

Mango tokku, @Siva, seems tasty by reading the recipe. My MIL used to make somewhat similar 'pickle' called 'Bisi uppinakaayi (Hot (as in temperature) Pickle) with raw mangoes. Very tasty to have it with chapatis, bread toasts too. But I always preferred it with steamed rice. It could not be preserved for long like other pickles.
