Three Week Challenge

A group of my friends in their late 20s/early 30s are visiting India in January and I want to recommend some places to them. They will be arriving/departing Delhi with a pre-planned two or three days in Lucknow at the start. They want to see as much as they can but they only have three weeks!

I've been before for a couple of months but I only did bits of Himachal Pradesh, Rajasthan and Goa in that time which was still a bit rushed, so I don't want to colour their judgement. Bearing in mind the distances involved and that these people have never travelled in the third world, what (realistic) itinerary would you reccomend?

Budget-wise they're probably looking at cheapish to mid-range, i.e. train travel second class AC, budget hotels rather than guesthouses and an avoidance of rice & dahl as their staple diet!

Any help would be much appreciated, but no travel agents or tours please.
