I am looking at Vipassana courses in Northern India - below is a list I pulled from dhamma.org - does anyone have a recommendation on any of these? I would appreciate your help...

Congratulation to choosing the Vipassana meditation.It seems you have decided to experience with the Dharma.Org branches.managed by the S.N.Goenka students.

All over the world the format of the Vipassansa designed and taught by Goenka remains same. You will feel the difference of location, climate, food, people, place, season.

It is your specific choice and needs that will guide you to select any place. Say if you are not habituated with too much oily and spicy and heavy food, then you will choose light food. and you will head towards Gujarat. But in the Vipassana centre they take care of your food, and so this aspect also is not a big issue. second is climate. In current month the climate is getting cold and slowly the winter is setting in. So from Nov to March you will experience the cold, colder to coldest period. bring some wollen clothings, some preventive medicines if you suffer colds frequently.
Else all centers are good .
