Depends on your other travels, or how long you intend to stay in Vrindavan, and whether you prefer city or rural town life. And whether you have been in India before. Varanasi could be a bit intense if it was your first closer contact with Indian reality. If it is not, and you like to explore the colorful markets, and the sites around, 8 days is okay. There is Sarnath nearby, a major Buddhist attraction which contrasts with the busy city of Varanasi. I personally am not a city person and prefer to stay at such places only for 3-4 days.
