Plenty of Ashrams and Gurus hanging around, although plenty of bullshit wallahas as well!
There is an Osho ashram retreat up around ten kilometers from Rishikesh on the road that heads north. The sign is in Hindi but it is situated right on the banks of the Ganga in a truly beautiful location. It's quite relaxed but is still obviously centred around Osho himself. I stayed there after a following a girl there. Very peaceful and great food!
Aside from that, as I said, Ashrams are all over the place. A good place to meet foreign travellers would be the Little Buddha cafe or it's more pretentious cousin, the Peace Cafe. The food in the Little Buddha is delicious and the service is friendly. There is also a small Italian restaurant owned by an Italian women; she bakes the best pizzas in Rishikesh.
There are plenty of ashram bashers on these fourms so they'll give you way more info than me! I heard the Ashram called Vivkat Niketan or something (it's near the now deserted Beatles ashram) is supposed to be good. I was thinking about staying there since they run courses on Hindu mythology but Rishiskesh will be baking hot until October!
There are also some nice treks around the surrounding hills. Check out Rough Guide or Lonely Planet or even wikitravel.org for more infomation. Have fun.

The monsoon's on its way. Be prepared for some cold days.

-->Plenty of things to do in rishikesh which will keep you busy.Take a day trip to Haridwar which is about 20 mins by bus/auto/taxi. Visit the mansa devi temple there by riding the cable car for great views from the top of hill. Have a look at the various ashrams there, the market bazaar, evening arati(prayer)to river ganga at haridwar is an ancient ritual which attracts thousands of people every day. One day to haridwar would be sufficient. -->Take a walk to the little water falls in the hills, one after laxman jhula(25 mins from laxman jhula), another after ram jhula.Enjoy the scenic beauty of the Ganga/rafters/hills while walking. Go and have a cup of coffee with a piece of cake at the german bakery at laxman jhula. Go to the pyramid cafe on hill top at laxman jhula and try the breakfast there. Have a look at the ashrams in ram jhula which are considered the "real" ashrams. Also, don't miss "Little Buddha" cafe at laxman jhula which i thought was THE BEST restaurant in rishikesh with delicious vegetarian food.
-->If you like a bit of walking on the hills, you can try the Nilkanth temple by walk or by private jeeps parked at laxman jhula. walking takes around 2 hours or by jeep 30 mins. Two way ticket would cost about a Rs100. If you can't go for this, try "Bhoothnath temple", the 15 storied temple which is about 15 mins walk from laxman jhula to have great views of rishikesh.
-->Attend the evening arati(prayer) at Parmarth Niketan ashram which is famous in rishikesh and clap your hands for the songs.Watch the rushing ganga river by walking over the bridge infront of Vedniketan ashram.
-->Visit the dilapidated Mahesh yogi ashram famously known as "Beatles ashram" at the end of ram jhula. This was the place where the beatles spent their time in learning meditation and yoga.
There are plenty of places to stay and learn yoga in rishikesh. VedNiketan Ashram is one of those basic ashrams in a natural setting with a big yoga hall & garden. Morning and evening yoga classes are free for those who stay at the ashram and also there is a 2 hour lecture on weekdays by a very knowledgeable swami on spirituality, yoga, kundalini and a lot of other subjects. A donation when you are leaving the ashram is expected for the lecture, but not compulsory(if you are donating, please be generous). You are bound to meet people if you stay in an ashram and attend yoga & lectures, so no need to look for someone.
Don't miss the yoga sessions of one "Surinder singh" near "Green Hotel" which is recommended and quite famous. You need to pay Rs150 per session of 2 hours. He used to teach at vedniketan ashram previously, but now started his own yoga training centre.
Lot of activity at parmarth niketan ashram in the evening everyday during evening prayers to the Ganga.
PS : Keep away from the junk swamis on the roadside offering drugs & chillum. Some of them are good.
