Udaipur or Bundi or Jaipur ???
We may only have time for 1 of these cities on our trip.
Anyone have thoughts on which one we should stop in for a couple days?

What other places are you planning to visit? From where will you be going to Rajasthan? From Rajasthan where are you planning to go?
Kedar Janani Devasthan, Mt Abu - Udaipur, Bharatpur, Agra, Gwalior, Orchha, Jhansi

We're traveling from Mumbai, heading North towards Haridwar. Ideally, we'd like to break the trip up with at least one stop (not Delhi). There's a train that leaves Kota at 3am, and gets into Haridwar at 4pm. I'd like to be on that train.
Kota is near Bundi. But we could also take a train/flight to Udaipur, then catch a train to Kota (and on to Haridwar). If we did that, we could probably stop in Bundi. Another option is to go straight from Mumbai to Jaipur. Then catch a train to Haridwar a couple nights later.
I just can't decide if we should aim for (a) Udaipur/maybe Bundi, (b) Bundi (via Kota), or (c)Jaipur.

Of the three Udapair has more to see and do, is more magical, more iconic and definitely the one I'd choose.
In saying that, it's all personal opinion and I'm sure others will disagree.

If you can take a flight and spend two days, go to Udaipur - you wont regret it.
If you cannot take a flight and are getting excellent train connections to and ex-Kota, stop by in Bundi. That's worthwhile as well.
Jaipur is the cleanest of the lot right now but complete two days are a minimum. I grew up there so my opinion is biased towards the city.

But we believe aarosh's advice is the best, to stay in Bundi if you have only a short time. Bundi is especially good because it's so quiet and relaxing. To try to do either of the others in so little time may make you crazy and will surely make you tired.
