Udaipur / Jaipur area - country side/ nature trips

Hi I am going to be visiting Udaipur and Jaipur in November and wondered if any one has any ideas for getting out of the towns and seeing the country side? Are there any walking tours/ camping trips possible in the surrounding country side? Or are there any good small hotels in the country side that you know of? I would really like to see some more Indian country side and nature but I am lacking ideas

After being let down by a company we'd hoped to use, we used the car and driver from Udaipur Outback to take us up to Kumbalgarh and Ranakpur from Udaipur.

They'll arrange pretty much anything you want in the countryside, and were very patient and even enthusiastic about stopping the car to show us things en route through the countryside. One of the most enjoyable days I've had in India was on a hike with a non English speaking bhil guide through the hills, he pointed out all manner of wildlife and plants that we'd never have seen without him.

Check out the website and the links for ideas and inspiration, I'm not sure if they are still going, but if not I'm sure there will be other people offering similar services.
