how to go from udaipur-jodhpur?

I know these two cities have no train service to connect them. Is an overnight bus a sensible option, or will it be the ride from hell?

Overnight bus is the only option.Its definately not ride from hell.
You can visit ranakpur midway to Jodhpur when travelling from Rajasthan Roadways.

Udaipur - Jopdhpur is a six hours journey in bus....easily manageable...nothing tough....
