There is this tasty black color pahadi Dal that we find in the route that connects Kedarnath area with Rudraparyag. I found those local dals during afternoon meals(Thali) near Chopta and Rudraprayag.
My cab driver preffered not stop at Chopta. But he stopped at a small dhaba near dugalbitta . On asking, he said that the dhaba served nice pahadi dal which is not served in the touristy Chopta. I tried it and it was yummy..

This particular flavor of pahadi dal had a lenient amount of ungrounded fried Dhaniya(Coriander) deep fried to black color in it. The taste was much different than the ones I have eaten in Rishikesh or Haridwar.

pahadi rajma ==> munsyari is famous for its rajma. i spent some time in some villages like bona, etc..that are away from the touristy trail. the rajma over there was tereffic. in fact, the food we had while at the village headman's house was absolutely yummy.

Jyoti,
Could be whole urad dal or gahat dal, both of them are cooked that way here. My guess would be whole urad dal as that is most commonly served in dhabas.

Almoraboy, the rjma from Harsil/Dharali is also very famous, the pseciality is that it cooks very quickly and most of the time we don't pre-soak it overnight like we do with other rajma.
