Recommend non-touristy stops from Delhi to Mumbai

Hello,

I will have 3 weeks in India for my first trip. Arriving in Delhi and will be traveling from Delhi to Mumbai, where I will fly out at the end of the trip. Now I just need to figure out my plan for everything in the middle.

I'm traveling with just a small backpack. Will be sleeping on the train as much as possible and skip a few nights of hotels etc. Want to see a few of the towns like Jaipur and Jodhpur, I'm thinking of hitting up the Ellora caves also, but other than that I want to avoid the big touristy areas (no Taj etc).

Any other recommended spots in between? Any elephant rides within reach? I would love to see some jungle... Really wanted to see Cherapunji but that's much too far away for this trip.

I'm a backpacker so I don't mind some walking. Everywhere I go must allow backpacks and cameras.

Perhaps I should clarify my question:

After visiting Jodhpur I need to start heading generally south towards Mumbai. I will have 9 or 10 days to reach Mumbai including any stops in between. Traveling by train.

Would like recommendations on best areas to visit between Jodhpur and Mumbai. Interested in seeing Ellora caves but other than that I'm not sure yet.

Can't help you sorry, but we're starting the same trip in the opposite direction (Mumbai to Delhi) a week Monday, so very interested in any replies you get! Good luck!
