Knife sharpening

Does anyone know of a good knife sharpener (either inanimate or person) for a Victorinox Swiss Army Knife and a good chef's knife?

There are guys who walk the street with a grinding wheel. I've never been able to catch one here, though. We were closer to the road in our old house, and more aware of the passing traders/services.

I wouldn't sharpen a Victorinox on one of those grinders for sure!!!

sharpening

your best bet would be to buy a whetstone from a good hardware shop, and carefully hone yr swiss army blade on that. it'sthe best too, for any chef's knife or general kitchen stuff. the roadside grinderwill sharpen yr blades but ruin them in the lng run.

I don't think you get any whetstones in India are fine enough for fine knives. Most professional sharperners will ruin your blade.

I'm not 100% sure of this, but I'd hazard that one can get whetstones. Remember... carpenters, joiners, chisels. I'm think I recall our workers sharpening their tools thus, a couple of years ago.

So I'd seek one where pros buy their tools ---and in Chennai, that means Parry's.

I might call the local fishing or angling club/society for a recommendation/referral. Stores that sell camping supplies may be another source of information &/or whetstones et al.

ive seen carpenters sharpen their blades by running them along a long wooden block with sand sprinkled on it... seemed to be effective enough. another time i saw a carpenter use a small triangular file that we bought for 10 or 12 bucks at a hardware store to sharpen the blade on a saw. he was going at it one teeth at a time.

That's how saws are sharpened everywhere, isn't it?

Hmmm... probably now there are gadgets to simplify the work, but I suspect that the purists, even the professional purists, might still use that same file.

i guess so considering that my grandfather was familiar with what he was doing but it was the first and only time i saw a carpenter do that....

You do get whetsones for fine blades in India. Ask at a good hardware shop- or better still, ask a workman in the neighbourhood where to buy one closeby.
