The river trip
I think this was introduced last winter.
I am trying to translate the menu to the best of my ability. 1. Rice 2.Ghee made from cow milk(yellowish). I get mine from Nilgiri's shop in Bangalore or Parsi Dairy in Mumbai. A portion of rice is mixed with the ghee & eaten with the fried brinjal. 3. Midget green chilies. Very potent & some what risky. Dal. It would probably be Muror Dal that is dal cooked with carp heads. 4. Lime. A variety which has a bit less tang but very strong aroma. In south of Italy I have seen similar ones. This is to be sqeezed on to the Muror Dal. 5. Long slim brinjals cut length wise fried in Ghee & served with a sprinkle of masala. 6. Banana flower dry preparation served with a garnish of crushed fried Bori(small balls made from lentil paste, hing etc. & sun dried.) For the best taste this is normally cooked in Ghee. 7. A kind of root but I dont know what is "Dasta". Normally a preparation called "Ghonto" is cooked with this type of tubor. 8. Fillets of Ilish fish cooked by the heat of steaming rice. The fish fillets are coated with turmeric, mustard paste & salt. Rice is cooked and half the portion is spread on a flat pot. The coated fish fillets along with mustard oil & green chilies are placed on the bed of hot rice & then the rest of the rice is spread over it & kept covered. The fillets are served with this rice. 9. Prawns. Not too sure at this moment the "chaapraa" preparation. 10. Sweetned reduced milk with savoury filled pancakes. I think there will be Pan to conclude the lunch. Regards. |

This about "Chaapra Chingri". These are whitish prawns the biological name is Penaeus indicus.
Their habitat is in the bottom mud or sand. Maximum total length 184 mm (male), 228 mm (female) usually much smaller (170 mm); maximum carapace length 56 mm. Presently selling for Rs.300/ for a Kg in Delhi. I hope they are serving Chingri Malai curry. |

...as usual, when it comes to matters epicurean, you're the last word.
i think you should write a book. just put together your posts at indiamike and it'll be a surefire hit. i'm not really a foodie, but no one's words have ever had such an effect on my tastebuds. you're the pablo neruda of cuisine. may you live a 100 yrs. |

Thanks Subho & TREKorDIE for your compliments. At this stage of my life I have too many loose ends to tie up, with the falling eyesight even picking up the loose ends have become difficult so I neither have the time or the discipline to write a book. I will be happy if my posts have helped any body to appreciate the great cusines of India. Let me put it this way that I will find my labours rewarded if I had been able to help some body to move away from "Butter chicken" or "Chicken tikka masala" & take a bold step in to the world of Indian cooking.
Regards. |
