do I need an onward ticket to clear immigration

Hiya,

we intend to fly into Delhi from Mexico, travel overland to Nepal, flying out of Kathmandu. Will we have any problems entering India without an obvious onward ticket?

Grateful for any help / experience.

I have never been asked, nor ever heard of anyone being asked for their return or onward ticket on entering India.

You'll need a visa, of course, but as you are travelling overland I'm sure you'll be aware of that already.
