Which Indian Curry you enjoy(ed) the most.....?
Is it Malai Kofta,.... Butter Chicken.... Palak Paneer.... Mutton Rogan Josh..... Bhindi Ki Subji or Plain Yellow Daal..?
Or Something very very special u have tried then why not share with all of us................ Well.... I like Rajma (red kidney bean curry)which is a extremely popular dish not just in North India but elsewhere as well. This is how it is prepared. INGREDIENTS: 2 cups red kidney beans soaked in water(2hrs). 2 tbsps vegetable cooking oil 1 tsp cumin seeds 1 large-sized onion chopped fine 6 cloves of garlic minced 2 large tomatoes chopped into 1" cubes 2 fresh green chillies chopped fine 2"piece of ginger finely chopped 2 tsps coriander powder 1 tsp cumin powder 1 tsp garam masala 1/4 tsp turmeric powder Salt to taste A pinch of asafetida Chopped coriander to garnish PREPARATION: Heat the oil in a deep pan and add the cumin seeds. When they stop sizzling, add the onion and fry till soft. Add the ginger and garlic and fry for 2 minutes. Add the green chillies, tomatoes, coriander, cumin, turmeric and garam masala powders and fry till the oil separates from the masala. Add the red kidney beans, 2 cups of warm water, asafetida, salt to taste and cook till beans are very soft (aproximately 10 minutes). Mash some of the beans roughly (this thickens the gravy). Garnish with corainder and serve piping hot with plain boiled rice and Kachumbar salad and a pickle of your choice. Wanna Try... Go ahead |

My fiance' and I cook our own most of the time, and of those, it's either Matar Paneer or Rogan Josh (or I should call it lamb curry since true rogan josh doesn't contain tomatoes....I found out the hard way
) with a sweet yogurt chutney and lots of warm Naan. And dessert has to be Gulab Jamun! YUM!!! |

I like fish curry with mustard seeds, coconut milk, etc. With some lemon juice I'm in heaven
Rajma is my favorite too! |

Pumpkin curry at Queen Cafe in Udaipur and cashew curry in the tiny cafe in Bundi - can't remember the name but you'll know the cafe because the gorgeous little girls of the house stand at the corner of the street and charm you into going to their mum's restaurant... go, its worth it!

I don't eat Rajma often. It is called 'rocket fuel' for a reason.
My favorites are mostly south Indian like chettinad dishes, kara kuzhambu, milagu araicha kuzhambu, vatha kuzhambu etc.

Cashew Curry recipe - No, I wish! and I'm trying to remember the name of the restaurant as well, its tiny and in a family home that also has a couple of rooms for staying. My son was 'helping out' in the kitchen and he says he saw cornflakes going in to the food....??? If you go to Udaipur though you can have cooking lessons at Queen Cafe - her stuffed green tomatoes are to die for!!!
The problem that I have is that some of the best food I had I either can't remember the name or never knew it as we bought it at a street stall - even when you ask the name you often can't understand the answer. |

Ummm..I love VathaKuzhambu...! managed to coax someone coming from India into getting 2 bottles of the ready to eat Vathakuzhambu mix here..
Stuffed Capsicum gravy & Pav Bhaji are another hot favourites.. |

Vathakuzhambu paste
The ready Vathakuzhambu paste which is readily available in Chennai, is a hot buy for us as it isnt found easily here in Mumbai. Use it also to make a yummy prawn curry / fish curry.

Try White curry (Pandhara rassa in local language) in any of the restaurants in south maharashtra especially, Kolhapur, Miraj, Sangli.
