What's your eggplant recipe?

I seem to make the same thing with eggplant so I'm looking for some new ideas on what you might do with it.

Baba Ghanouj - middle eastern dip like hummous
Caponata - Italian salad w. tomatoes and veggies
Stir fry w. Oyster sauce (works best with the long purple eggplants) There are Thai and Chinese versions.

and of course the Indian dish, Baingan ka Bharta

Thanks! I'm familiar with most other dishes but prefer to hear more about the Indian dishes.

With small round purple eggplant one can make a nice dish. Essentiallyy, each eggplant os cut from the bottom side in 4 quadrants without cutting through it since the stem portion keeps it intact. The cuts are then stufed with masala. I will have to find the receipe, however, I would suggest checking out:

Baigan Ka Bharta is a popular one , and relatively easy to make as well. you should be able to find recipes for this on the sites mentioned.
