What do you use mustard oil in?

I have some mustard oil and think it has a wonderful flavor... I just need some recipies that use it.

Mustard oil is the main cooking medium for the people of Bengal, Bihar & Orissa. Although bland vegetable oil is also used, for cooking fish mustard oil is the preferred medium. Most pickles are also made using mustard oil.
Try fish fry using mustard oil.

East Indians and (some communities in Central India) use mustard oil in all sort of cooking. It tastes strange (and bitter) to those who so not normally use it.
I persnally do not like it.

Taste is ok for me. But I cant stand its smell! Too strong for my liking.

Mustard oil can replace the vegetable oil in almost all the Indian curries except maybe the ones in south, which are cooked in coconut oil. I agree that the smell is unpleasent while cooking, but the trick is to heat the oil till it fumes, add a pinch of sugar in it and then remove the burnt sugar. Bring the temperature down to what your recipe demands and continue... By doing so you will get rid of the bitterness and smell in the cooked dish. But if you like the taste of mustard.... dont even bother...

Try marinating the fish in mustard paste with salt, turmeric, ginder-garlic paste, chilly powder, lemon juice for 15 mins and then fry it on a skillet in mustard oil.

No...no... Avva-Avvalu-mustard, kai-raw fruit, the name can give you that impression but the fact is that those tangy pieces float in Sesame (Til as they call it here) oil. It is the hottest/tastiest pickle ever made on earth , you just have to see it to believe it!!

Mustard oil is definitely used for pickles in other parts of India.

The other uses of Mustard Oil (by Bengalis):

1. As hair oil
2. for (self)massaging prior to take bath, the ritual include drops of oil in nose, ears and navel.
3. Drops of Mustard oil in nose suppose to cure cold & runny nose (it stings like hell!)
4. Massage of warm mustard oil heated with garlic on underneath feet and joints suppose to cure cold and joint aches.
5. Infants are given massage with oil heated with black cumin seed to make their bones strong

Yes, mustard oil is used by Bengalis especially for fish dishes. When I cook fish, I soak a lot of mustard seeds (say 3-4 tablespoons) in water over night. I then make a paste of this in the grinder - one can add buttermilk instead of water - and then rub the fish with this paste and haldi (turmeric) as a marinade.

For cooking the fish as a curry I learnt a neat trick (say catfish, a bottom dweller - but, I love it) - bake th efish in the oven for 15-20 mins each side (broil temperature). Then the baked fish is added to the sauce while cooking (after doing the customary frying of onions, ginger & garlic) - this way the baked fish stays to gether and does not fall off and crumble or dissolve in the sauce. My friends from Orissa taught me this trick.

Two uses of mustard oil which are not listed above:-

1. For lighting "diyas" to Gods or any religious purpose because it is the cheapest oil around. We buy it only for that purpose.
2. Mustard oil heated with garlic is used as ear drop. The practice has discountinued for sometime now in my house.

Mustard oil is generally used whenever we have to give a dish a pungent taste.
