Microwave Mango Chutney:

A Raw (green)mango
Sugar (at least a tablespoon)
Turmeric-a pinch
pepper or chily powder
cumin seeds
Salt

De-skin the mango and grate its flesh till the seed is bare.
Add salt and turmeric to the grated mano and mix well and leave it aside for 5 minutes.
Add the sugar and mix.
Put the mix in a microwave safe bowl and cook it at 100% for 6 minutes.
Splutter some cumin seeds in hot oil.
Remove mango paste from the oven, add the cumin and the chilly/pepper powder and mix well. Transfer the warm mix to an airtight jar. Can be stored for a week. Goes well as an accompaniment with Chapatis, rotis and other Indian breads.
Remove from oven

Whatīs for dinner tonight?

Whilst trying to figure out what to cook for my boys and me tonight
(maybe rice and dhal - but the boys will hate me for that),
I was wondering what you lucky guys out there in India will have for dinner tonight?

Just thinking about it makes me pretty jealous!

I stopped at my favourite Chaat house on the way back home, so really full with the Pav Bhaji and 10 jelibi's I had. Guess dinner will just be curd rice!

Pav Bhaji sounds great!

I changed my mind and so thereīs some lamb curry with coconut sauce on the cooker.

Itīs snowing over here and Iīve got a wood fire up, so I can do with some Inspiration.

Anyone in Delhi eating out at Karimīs Hotel tonight?

Last night I managed to have a great dosa here in Ottawa. We stood outside the place for 15 minutes, in the cold, waiting for the place to open. And it was worth it mmmm.

Throw some potatoes in the fire and serve it with the lamb curry... Himmlisch and if you have sauerrahm..put some crushed garlic in it and put a dollop of it on the baked potatoes

Prawns for dinner tonight

This is a complete meal which I have planed for our dinner tonight.

300 gram small sized prawns shelled, deveined and cleaned
― teaspoon turmeric powder
1 large onion chopped
1 teaspoon each of corriander and red chilli powders
1 teaspoon cumin seeds
4 bay leaves
2 cups long-grain Basmati rice
4 cups hot water
1 tablespoon ghee
salt to taste

Grind to a fine paste:
1 teaspoon cinnamon pieces
1 tablespoon chopped ginger
2 green chillies chopped
4 green cardamoms peeled
2 cloves
salt to taste
water required to grind the paste


Methode:
Rub the prawns with some salt and half the quantity of
turmeric powder. Keep aside.
Heat the ghee in a heavy bottomed pot and saute the prawns on medium heat for about 2 minutes. Remove the prawns with a slotted spoon onto a plate.
Add the bay leaves and cumin seeds to the same pot. Saute briefly. Add the chopped onions and saute till they are golden brown. Add the rice, the ground paste, turmeric, red chilli and coriander powders. Stir fry briefly. Add the prawns, salt and the hot water. Bring to a boil and simmer on low heat for about 15 minutes or till all the water has evaporated and the rice is cooked but firm.

Funny I just checked this thread and the missus shouted for me. I made it though. Cold meats, salads and home made bread, washed down with English beer.

Yes ddutta prawns are aplenty this season & got tired of Prawn Malaicurry. Incidently I was a guest at the Kolkata Rotary club picnic last Sunday & ate fantastic Malaicurry cooked by an eminent chef of Kolkata.

Went there last week (the new noida branch) with friends but the doorman denied me entry as i was reaking of beer, guests there are NOT supposed to consume any alcoholic drinks before/after entering Karim's, i found it strange

I have been eating at Karim's hotel in Jama Masjid for almost 38 years. I always have some drinks before going there. Unless you are aparantly drunk there is no problem.
The food at other outlets than the Jama Masjid are not as good as it is at their main establishment in Jama Masjid.

I made Aloo Gobi last night but it ended up a bit too watery, so I threw some yellow dal in with it in the pressure cooker as a last ditch effort...it turned out to be VERY tasty! Tonight I'm making pakora veggies to go with leftovers.

Would love to hear more recipies....

Potato

For me it is a casserole of bacon & lamb along with potatoes, turnips, carrots & shitake mushrooms, cooked in red wine gravy tonight, I must remember to buy garlic bread on my way home.

bhabi next time try a bit of besan!

For all potato lovers here is one nice stuff.

Ingredients
6 medium potatoes, cut into 4 pc
2 medium Onions
4 cloves Garlic
1 tsp Coriander Powder
1/2 tsp Cumin Seed Powder
1.5 tsp Red Chili Powder
1/4 tsp Turmeric powder
Salt to taste
2 tbsp Ghee
4 tbsp Cooking Oil
1 cup Water
1/2 tsp Garam Masala Powder
1 tbsp Tomato Puree
2 Bay Leaf
1/2 inch Ginger
A pinch of sugar.

Coat the potatoes with a mix of turmeric powder and salt.
Shallow fry in a pan and keep it aside.
Finely Chop 1.5 onions and keep it aside. Make a paste of the half onion, garlic and ginger and keep it aside.
Heat 1 tbsp Ghee and all of the cooking oil in a frying pan. Add bay leaf and fry for a while.
Now add the chopped onions, and fry it till golden brown. Add the ginger-garlic-onion paste & the sugar and fry for another 2 minutes.
Add rest of the spices except the garam masala and the tomato puree. Fry in low heat till oil leaves the side of the pan.

Add the fried potatoes and stir for another minute or so. Add water, salt, Garam masala powder, and ghee and bring it to boil
Cook it in low heat till the potatoes are properly cooked and the gravy is thick.

Serve with paratha or luchi. Best with Green peas katchori(recipe had been posted earlier)

Jyotirmoy: If you ever need a kitchen assistant, I'll gladly volunteer to peel potatoes or something in return for a taste! Your meals sound much more exotic than my typical 2 minute noodle dinners!
Might have to drop around to my Mum's now, you've made me hungry for some good cooking...
