okra recipe wanted
does anyone have a good recipe for okra? sorry -- have no idea what okra would be called in India!
I love love love the way okra is prepared in india, I could have it every day. I had it the other day at a "Taste of Sri Lanka" party and I said I HAVE to learn how to make this! thanks! ![]() |

Cook it 'dry' with some spices to your taste, and add tomato, garlic ginger.
It can be very glutionus, slimy if you cook wet. Its called in bindi in hindi, but check out Tamil names here http://www.indianfoodsco.com/Classes/Glossary.htm. Pronounciation might be a bit of a problem in TN but persevere |

yes, I know about the sliminess of it when you cook it -- okra is very common veg in the southern US -- but have no idea what you mean by cooking it "dry"!

Okra
My favourite recipe for okra(bhindi or ladies fingers) -
Take several okra in a bowl or any vessel. Slice each lengthwise into two halves. Sprinkle a little turmeric, red chilly powder and salt. Mix well. Sprinkle dry rice(or wheat) flour and mix till each okra half gets lightly coated with flour. Shallow fry in oil on a griddle(tawa) until crisp. Remove on absorbent paper to take out excess oil. Enjoy!! It doesn't matter how many okra you make. If I am there, it serves only one! |

thanks so much for the links, I've already printed some recipes. I don't eat fried foods so good there are recipes for "no fry".....
sorry for dumb question, but is khus-khus the same as couscous? |

Quickest way - chop okra into 1.5cm pieces amd leave under fan for 15 mins to let the slimy stuff dry. Take an iron kadai or wok, add oil, when heated, add mustard, let it pop, add some red chilli powder, few coarsely ground peppers, a vertically sliced(split) green chilli, a pinch asafoetida, some (6-8) curry leaves, a pinch of dhania powder, and salt. Then add the chopped okra and stir fry for 10 mins, sprinkle a few drops of water, cover with lid and let the moisture steam fry it for another 5 mins, open lid to stir occassionaly.
You are done. Total time 15 mins. Great for on-the-move meals. Regards |

Spicy Okra:
12 ounces okra 2 tablespoons vegetable oil 1 (1 inch) piece of gingerroot, grated 1 teaspoon ground tumeric 1/2 teaspoon chile powder salt to taste 1 teaspoon garbanzo bean flour 3 tablespoons of water 1 1/2 cups of plain yogurt 2 tablespoons chopped cilantro to garnish Rinse okra and pat dry with paper towels,then cut into thick slices. Heat oil in a medium saucepan, add okra and cook 4 minutes, stirring occasionally. Stir in gingerroot, tumeric, chile powder, salt and flour; cook 1 minute more. Stir in water, then cover and simmer 10 minutes, or until okra is tender. Stir in yogurt and reheat gently. Serve hot, sprinkled with cilantro. |

Wow - IndiaMike is going to make me gain just as much weight as I did in India! So many yummy recipes! Okra is very nutritious and if cooked properly it won't get all slimy. Lots of good recipes on here to try this week!
