Mughlai goptan of eggs

I wont put it the usual way of ingredients, method etc.
Take as many large eggs as you want. Make a very small hole without breaking the shell.
Take out the contents of the eggs. I use a tooth pick to stir up the inside of the eggs to loosen the Albumen sticking at places to the inside of the shell. Now mix a bit of saffron & pepper with the eggs & stir gently. Don’t let the mixture forth.
Warm a little ghee in a pan & add salt & crushed seeds of green cardamom; don’t fry. Mix this with the eggs. Now comes the difficult part. Put this mixture back in to the shells.
Cover & seal the holes with maida. Carefully place the "eggs" on a pan, cover with wet cloth & steam till these are hard-boiled. Cool & de-shell.
In a nonstick pan heat a little ghee & sauté these & serve as entrée.

tools

Somnath,
Very primitive tools, a knitting needle to drill and a butter paper folded in conical form to fill. I once used to have a dropper, which mysteriously disappeared after a party. I checked with a stationary shop whose signboard claims this establishment to sell all equipments suitable for literary & artistic pursuits. The young guy across the counter had never heard of it & wouldn’t believe that one could fill a pen with ink by this. He smartly advised me to buy an eye lotion from the pharmacy. He said he is absolutely certain that in this process I could have this contraption. Today’s young people are very resourceful. Then I understood that this dropper has acquired an antique status & some inebriated sufferer of life had pocketed my dear dropper.
