Microwave Mango Chutney:
A Raw (green)mango Sugar (at least a tablespoon) Turmeric-a pinch pepper or chily powder cumin seeds Salt De-skin the mango and grate its flesh till the seed is bare. Add salt and turmeric to the grated mano and mix well and leave it aside for 5 minutes. Add the sugar and mix. Put the mix in a microwave safe bowl and cook it at 100% for 6 minutes. Splutter some cumin seeds in hot oil. Remove mango paste from the oven, add the cumin and the chilly/pepper powder and mix well. Transfer the warm mix to an airtight jar. Can be stored for a week. Goes well as an accompaniment with Chapatis, rotis and other Indian breads. Remove from oven
