hey IMers I just tried this recipe a friend gave me over the weekend, and it turned quite nice, so I thought i'd share it with you.

Ingredients:
Dried apricots 1cup
Sugar 1/4cup approximately
Water to soak apricots in

Wash & soak the apricots in water for 5-6hrs or overnight. De-seed the apricots & crush them with fingers or hand blender in the water. Put them in a pan & add sugar, as apricots are already sweet you might want to stick to only 1/4 cup, but you can add more if you've got a sweeter tooth. Cook over medium heat till the apricots are fully cooked .The color changes from light brown to dark brown.

P.S: When u break the seeds u get a small nut that can be chopped & garnished over the dessert before serving.

Is this an Indian recipe? I wonder since I don't know if there are apricots in India. But here in my country we have only in summer, so I will try it for sure since I adore apricots a lot. In California, are there apricot tress??? Just wondering...

Yup its very indian, in fact it's a speciality of Hyderabad. And we have apricots pretty much all year round in california, most of them are imported during the winter months, but the california apricots come in during the spring/summer, and they are the best!

Ignite, you should try the Armenian apricots in summer...it is very much delicious and natural, more than that you can pick it up yourself in the valley which is more enjoyable.

Annita, I'd love to try the Armenian apricots, maybe during my next Euro trip during the summer of '09, i'll drop Armenia, and maybe you can show me the valley where i can pick my own apricots.

Try this recipe, and let me know how it worked out for you.

Ignite, for sure I will be glad to show you how to do it and where to do it By the way, I am sure you can find Armenian apricots in Glendale and Los Angeles for sure. But try it in summer, that's the season for it. Many Armenian shops are there, and I am sure you know at least one Armenian in California

I will try the recipe for sure, but in summer, and will let you know.
