does anybody know the traditional bengali recipe of "Khichuri"...

Khichri

This is a rice & dal combo. We traditionally eat this on rainy days. It is easy to make & very delicious.

Rice: 500 gms(1 lb).
Moong dal(roasted) : 500 gms(1 lb).
Cinnamon : 4 sticks(2.5 cms long).
Whole cardamoms : 4-5.
Whole cloves : 4-5.
Whole cumin seeds: a liberal pinch.
Bay leaves : 2.
Ginger : 4 cm long , chopped fine.
Whole green chillies: 2,washed.
Turmeric powder : 1.5 tsp.
Mustard oil : 60 ml.
salt sugar to taste and ghee.


Procedure:

First rinse the rice and leave it to dry in a colander. Put a tawa on heat & dry roast the dal, stop when the aroma comes out.
Heat water in a pot.(adding hot water always aids the cooking process than adding cold water).
Heat oil in a heavy bottomed cooking pot and add the whole garam masala with the bay leaves .When they start sputtering and gives out a flavour add the cumin and the ginger and cook by stirring until u get the nutty flavour of cooked ginger.
Add the rice to the oil and fry for 2/3 minutes.
Add the roasted moong dal and the turmeric powder after adding some water(hot).The level of water should not be more than 4 cm(1.5 in.) above the level of rice and dal.
After checking for the lentils to get cooked add the whole green chillies , salt and sugar to taste and just before removing from the fire add some powdered garam masala and the ghee.
The khichuri is accompanied by fried halves of potol roundels of poatatoes , brinjal , ilish mach , or some other fried fish, sometimes eggs , and any other fritters that u can think of. I always fry some Papads to go with it. U can use pices of crisp Papads as spoon to scoop up hot Khichri!

Always reminds me of that dish in Egypt called katchori or something like that

Koshary

The egyptian dish is called koshary here's a recipe

Koshary Pasta

Ingredients:

2 cups cooked rice
2 cups cooked penne pasta
2 tablespoons white vinegar
1 teaspoon Ground Cumin , divided
1/2 teaspoon Garlic Powder
1 cup cooked lentils
1 can (15 ounces) crushed tomatoes
1/2 cup water
1 1/2 tablespoons sugar
3/4 teaspoon Ground Cinnamon
1/2 teaspoon salt
1/4 teaspoon Crushed Red Pepper
3 medium yellow squash, cut into 1/2-inch pieces (about 3 cups)
2 medium onions, thinly sliced (about 2 cups), optional*

Instructions:

1. Combine rice and pasta; spoon in bottom of shallow serving platter. Keep warm.

2. Whisk together vinegar, 1/2 teaspoon cumin, and garlic powder in a medium bowl. Add cooked lentils and stir to combine. Spoon over rice and pasta.

3. Combine tomatoes, water, sugar, cinnamon, salt, remaining 1/2 teaspoon cumin and red pepper in a medium saucepan. Cook over medium heat about 5 minutes or until heated through, stirring occasionally. Stir in squash. Spoon tomato mixure over lentil layer. Partially stir tomato mixture into other layers, but do not completely combine all layers. If desired, prepare crisp-brown onions as directed below and add as a topping.

*Cook onions in large skillet with 1 tablespoon oil over high heat, stirring frequently, until brown and slightly crispy, about 10 minutes.

Thanks a lot CH... I was running out of ideas with Pasta this one will be my next try.... making Deviled eggs Bengali style for dinner
