Its dessert! - Shahi Tukda

Very daftly dodged the noose! I will make the dessert tonight. This one is simple so very cunnungly selected this one. But it tastes heavenly.

Ingredients :
8 slices of white bread
4 cups milk
1/2 can condensed milk
1 tbsp corn flour
1 tbsp chopped assorted nuts, I use almonds, pistachio & hazel nuts.
Seeds of 4 green cardamoms ground coarsely
A pinch of Saffron dissolved in warm milk(optional)
ghee to fry

For syrup:
1-1/4 cup sugar
1 cup water


Method :

Make a smooth paste of corn flour with ½ cup of milk. Gently fold in the condensed milk with the rest of the milk & stir to mix.
Bring milk mixture to boil. Slowly add the corn flour paste. Cook stirring constantly until thick. Add cardamom powder. Cool & add the chopped nuts. Also add the saffron if you are using it.
Prepare syrup by boiling water and sugar together. While boiling spoon out any scum that floats on the surface. After it has reduced to syrupy consistency cool. Strain and keep aside.
Cut bread slices into two and deep fry these in ghee till golden brown.
Pick up the fried bread pieces & put them into the sugar syrup. Dip for a minute. Remove from syrup, and arrange in a serving dish.
Lather syrup soaked bread pieces with the mixture of condensed milk and nuts.

Serve chilled.

While traveling in northern Spain I ate a very similar dessert near Bilbao, it had eggs in its preparation. It was called Bilbao crème or something similar with saffron flavouring.

The condensed milk part is a short cut. It can be done by reducing milk but it takes long time & if the film forms on the milk surface the smoothness is lost. That is why I recommend this methode.

It's also tiring standing and stirring. The condensed milk is a much better option, imo!!! I'll let you know on Monday how it turned out.

dessert of custard pudding with chopped apples, grapes, bananas and topped with red cherries served after cooling in the fridge soothes the nerves and has a wonderful effect of leading you into dreamland, ever so slowly.

Of course Shimla how right you are! Isnt it great? Today I just made this While my better half made a Chicken curry with potato. I deftly avoided the noose of cooking the main dish but tomorow I have a Ilisih to cook... wish me luck after a few swigs of Old Monk!

This I have been served in an army officer's mess...and was told that this was very often served ....It really tastes heavenly....thanks for the recipe....

this is a sweet dish. there are three ingredients - oranges, milk and sugar and, of course, willingness to be patient.

first, peel, skin and separate the orange pods. the oranges must be of the sweet variety. heat the milk to half (if you begin with one liter, it has to reduce to at least half) to obtain the thick gravy base, add sugar and allow it to dissolve. then cool and add the oranges, stir to mix, chill and serve with garnishings of pistachios, kish-mish, cashew nuts etcetera.

you will have to endure cries of 'yeh dil maange more' from whoever partakes of this dream preparation.

Sadhuji yes there is nothing like Kheer Kamla, but the sad part is who is willing to be patient today? The milk must be reduced over a low flame & stired continuously to have the end product smooth & creamy. I miss the oranges from Darjeeling. The flavour & taste both used to be so nice.
