You stole my line ![]() I was about to write that the road-side chaat, bhel puri and other snacks taste so good 'cause of the sweat from the guy standing in the hot sun (as he wipes the back of his hand across his forehead) as well as the water used which cannot be duplicated at home !! I had a Sikh friend who would act it out... wiping the sweat, digging his nose, miming using dirty water and a dirty dishrag, scratching some body parts, dipping the plates into a bucket of reused water... all the while 'giving' you the next pani puri!
He was hilarious! |

Haldiram's sells packaged Bhel Puri along with the sauces. Use that as the base and add as you please. Mrs.P whips up a mean Bhel Puri for me using this. She then goes on to add tomatoes, onions, coriander, green chillies and if time permits boiled potatoes. As far as I am concerned this is the best Bhel in town

when i was in little india in jackson heights last week, at patel brothers, gathering my ingredients, i asked a manager about the location of certain things. well, the aunties within ear shot took great interest in my inquiries, and i was summarily adopted and led about the store. one woman took me to the packaged bhel puri section and discussed the relative merits of each. she then poked about in my basket to see what else i had, commenting on everything and giving me preparation pointers. i wanted to ask her to take me home for a cooking lesson!
maybe i'll make a sign to that effect and post myself in front of patel brothers one of these weekends! "feed me--teach me." ![]() |

Bhel puri minus the fried sev and puri

A ready made Bhel sauce easily available in Mumbai is "Smith & Jones" brand, its really good, combining the sweet with spicy chutneys. If you want a healthy but nonetheless tasty bhel packed with nutrition, try this: Use only kurmura - puffed rice. No sev, no puri Add plenty of any combination or all of the following: finely chopped onions, boiled potato, mung bean sprouts, grated carrots, spring onion chives, grated beet, coriander, mint,capsicum, raw mango and / or any other salad veg that takes your fancy. If adding cucumber / tomato, add them last as these are 'leaky' vegetables. Add peanuts. Mix together with ready S&J sauce to taste. Your bhel is ready. Except for the peanuts, there is no added fat so you can eat as much as you want without any guilt. |
