Microwave Carrot Halwa


Ingredients

500 gms. carrots peeled, grated
200 ml. milk
1/2 cup castor sugar
1/2 cup khoya or milk powder
1 tbsp. ghee
1 tbsp. badam, pista, chopped
1/2 tsp. elachi powder
1/4 tsp. saffron crushed - optional

Mix carrot and milk in a deep microwaveproof bowl.
Allow for ample boiling space in the bowl.
Microwave on high for 8 minutes - check after 5 minutes. Stand for 5 minutes.
Stir well, add khoya or milk powder and sugar and stir again.
Microwave on high for 8 minutes - check after 5 minutes. Stand for 3 minutes.
Add ghee, elachi powder and mix well.
Microwave on high for 2 minutes.
Garnish with chopped nuts.
Serve hot or cooled.
Reheat in in microwave for 1 minute before serving.
Making time: 30 minutes
Makes 6 servings

Gajar halwa recipe

I hope you like it, I love this dessert, in the winter, so typical of Indian cuisine. Bon appetit!


Ingredients

1 kg Carrots
1 litre Milk
1 teaspoon Cardamom seeds
3/4 cup Water
3 tablespoons Ghee
2 tablespoons Raisins
2 tablespoons Almonds
2 tablespoons Pistachios
450 grams Sugar

Method

Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.
Put the water to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.
Add the milk. Cook on a low flame for 1 hour stirring occasionally.
Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.
Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins.
Mix well. Remove from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve cold, hot or at room temperature.

This desset surely deserved a thread for itself.

Did you know, you can make a halwa in the same procedure with pumpkin also. That tastes good too.

My mom used to make the same halwa with beetroot. That tastes good too.

Next time, try the same with beetroot or pumpkin...

Hey...why do you have to boil the carrots in water first? I boil them in the milk right away...also, I fry the grated carrot for a minute in butter before adding the milk...

Add a little condensed milk towards the end...thickens the halwa and adds a nice taste to it.

Ghee Whiz

Love Halwa but where I am there is NO Ghee, can I substitute with something or concoct it myself?

Yes, you can boil it in milk since the beginning, if you prefer so.
There are many variations, of course.
