I have only made Dhokla in a steamer. It is similar to making idlis.- Mix up Dhokla batter
- Pour it on to a shallow vessel, which in turn should fit loosely in a larger one.
- Boil an inch or two of water in the larger vessel
- Place the tray with Dhokla in the vessel. Use a small bowl to keep the tray above water
- place a loose lid, and steam it for 15-20 minutes for the dough to cook. Like cake, a tooth pick test will tell you when it is done.
Dhokla Mix is basically Besan (gram flower), with a few spices and a raising agent. Traditionally curd and baking soda are used. A successful innovation is to use curd (for taste and fluid) and one packet of "Eno" as a raising agent. The Dhoklas will come out professionally fluffy

After the Dhokla is baked, prepare the seasoning by frying a spoon full of Mustard seeds, kadi leaves in mustard oil and pour it over the Dhokla.
