I think it's indispensible for a really good channa masala.

Since I had to look it up, it may be handy for others as well to know it seems to refer to "mango powder," made from dried ground mangoes. Also spelled amchoor powder.

No idea about its uses, had never heard of it before.

Chicken and fish dishes can also be enriched with a little sour, tangy taste of amchur powder.

Is amchur ever used alone or always with other spices?

Mostly it is used to bring an added flavour, as referred in few posts above.

However, my wife told me that they used to have just the powder at times, to have a sweeping change of taste - and she is a bengali (like me )...

My understanding was that it is made from unripe mangoes, is this correct?

Does it have any particular health benefits?

I can't remember the exact recipe but I used to have a fab recipe for aubergine pakoras/fritters that used amchoor....it was pretty much - make up some usual pakora batter with besan (chickpea) flour and water, a little salt and garam masala, slice aubergines about 1 cm thickness and sprinkle generously with amchoor, dip in batter and shallow fry in 1 - 2 cm hottish oil.........

very yummy - crispy on the outside, soft and tender inside...

Amchur is Green mango powder, lovely alternative to lemon or Tamarind sometimes.
I put it in Sweet juices as well, like apple or berry.

There's a lovely salad from Kerala, with tomatoes, thinly sliced Red onions, coriander and a sprinkling of amchur. Wait a half hour and I eat it with fresh white bread, and a hot cup of tea.
It's wet, sweet, sour, cold all at the same time.
Great on a scalding hot day.
