Aloo Chaat: Help me find a recipie
I'm looking for a recipie to make fried spuds like the street vendors in Delhi.
We had a few (loads) of portions from accross the road from the train station. He fried cooked potatoes in a wock and added spice and lemon juice. What was the spice? I'm realy wanting some right now ![]() |

What did it taste like? It could be a lot of things. But my guess would be:
a bit of fenugreek (methi) a bit of coriander (dhaniya) a bit of cumin (jeera) cayenne (mirch) a bit of turmeric (haldi) some salt (namak) It would be important to fry the spices in the oil first and then add the potatoes. That way the flavor of the spice goes into the oil and then is available to spread all over the potatoes. Add the turmeric and salt after the potatoes. Also maybe a bit of garlic and onion paste would go in the oil too? |

Spud is western slang for potato. At one time they were considered toxic being a member of the nightshade family (Solanaceae).
An organization called the Society for Prevention of Unwholesome Diets tried to discourage people from eating the tubers and their acronym got associated with the potato. W22 |

its not a complicated recipe...you can search net for Coriander chutney..make that chutney...fry the potatoes, get some chaat masala..(In India we can buy readymade over the shelf)..
mix fried potatoes, with chutney , chaat masala and Lemon juice.. that should do the trick..the taste may differ with the chutney... you can make it with different chutneys...like Pudina..onion etc... |

I forgot to add it was a dry dish, no sauce. He fryed potatoes and added the spice after. |
