Aam Panna

Can anyone explain how to make Aam Panna? I think it involves green mangos, black Himalayan rock salt and....?

This is a most delicious, cooling and savoury drink, but anyone who was able to make it has been (so far) unable to tell me in English the ingredients.

India and environs have some of the best beverages including honey/lemon/ginger; sweet lime soda with black salt; badam milk, and Masala Coke.

here it is:

Aam Panna


Preparation Time : 20 mins
Cooking Time : 15mins
Serves / Makes : 4

Ingredients
Half kg raw mangoes
Sugar-to taste
Rock salt-to taste
Ground jeera powder-½ tsp ( Cumin Seeds, roast them before grinding to get a better flavor)
Mint leaves-a few

Method
Peel and wash mangoes.
Cut mangoes into pieces.
In pressure pan, putin mango pieces along with the seeds and boil for 5 mins.
Let it cool and then strain to get the pulp.
Add sugar,salt and jeera powder.
Cool in fridge.
When chilled servein tall glass with a few mint leaves floating on top.
Excellent for a hot summer!!

User Comments & Tips
You may also add ginger if you like.

This is taken off a website, but my mother used to make it using the same recipe. Just that she also added a hint of asafoetida as well.

As a child I used to like Panna but not anymore... too sweet for my liking.

Lucky you ...well I have never tasted Aam panna anywhere the type my Late Granny made.

She would roast the green mangoes in a small lil tandoor (mud tandoor) and then dip them in cold water..peel off and take out the pulp by rubbing it inside a white muslin cloth (kept adding lil cold water)..at last when it was done she would put black salt, common white salt, roasted & grounded cumin seeds, lil red chilli (roasted & grounded), roasted hing, and finely chopped mint leaves.....kept in the refrigerator for a couple of hours n it was ready to drink...mmmmm...Daadi Maa I miss u

My friend makes it in a jiffy, on demand...she just grinds the raw-mango pulp and a few mint leaves with a little water, sieves it and adds- sugar, salt, rock-salt, roasted cumin powder and tops it up with lots of ice...and voila... delicious aam-panna is ready in no time and trust me the raw mango (without boiling) flavour is very refreshing, especially in hot summer!!
