A summer dessert - Srikhand

Srikhand

Ingredients

2 cups Natural yogurt
2 cups Sugar
1 tsp Saffron soaked in warm milk
Green cardamom Powder - a pinch
Pistachios - 3-4 chopped fine

Method:

Tie the yougurt overnight in a muslin cloth & hang it. In the morning you will see that all water has gone and what is left is just thick curd. Put this in a flat bowl, add sugar, saffron and start mixing and beating it for about 1/2 hour till sugar is dissolved and its become thick. Beat only in one direction.
Keep it in the fridge uncovered for some time till it becomes thicker.
Keep stirring for another 15 mins, add elaichi powder (optional considering saffron has been used ) add chopped pistas.
Transfer in a glass bowl and refrigerate till you serve.
You can add mango pulp too.
It is said that a blob of well made Shrikhand thrown on a wall sticks to the wall & doesn’t fall off !!!!!!!

i will get diabetes pretty soon if i dont stop. i think with all the new years we had this month, i am done with my april quota for sugar long time back.

you need to be shot for bringing up shrikhand here...one of my favorites...i am too lazy to make it...the warana milk outlets here sell it and its short walk to it .....i like the plain one!...i had the best ones in baroda though...!
