You get Amazing Aappam and Mutta Curry (Egg Curry) in Ernakulam Station.

Pazham Pori's and Unni appam are very common in any of the railway stalls in Kerala.

You get a mouth watering Bread Omlet in Guntur Railway station. Never used to miss em enroute to Chennai from Hyd in Chennai express. Sometimes, when the train is delayed, I used to stay awake till the train reaches guntur just for this bread omlet.

chicken-curry-rice was available in most major terminals, many moons ago.
the one thing that was always available in the station dining hall [yea, thats what they were called - what cafeteria ???? ] - it was to die for.
then it kinda died out some - and the closest i've come to having the same taste is in kwality's on park street, calcutta

roasted cashew nuts [mandatory buy] margaon station.
dry-fruit chikkis - lonavla
buttermilk - vijaywada station [howrah to chennai]
jhalmuri - orissa / bengal border [chennai to howrah]
chai - kharagpur
all the oil dripping fried yummies at all them stations - sampark kranti - BLR/DEL [this train goes through, at least 4 states... and each region brings with them its goodies.]
