Urad dal flour & besan flour

Urad dal flour & besan flour

What is the difference between these two flours... in other words, what do you use each in or are they interchangeable? Tell me more about roasting the flours first. What does this accomplish?

They're different. Urad dal is a lentil and besan is chick peas. I've roasted the besan over low-med heat in a cast iron pan...makes it turn more golden after stirring for awhile (have to keep stirring to keep from burning), and gives whatever you make with it have a more toasty flavor, very nice.

I have never worked with Urad Dal flour myself, but I have had it in dosa. I have cooked with besan a lot. Most recently when I made besan ka laddoo. The smell of toasted besan flour is heavenly
However, you have to be careful when you brown it though because it can go downhill fast and burn. Some shops actually sell "pre-browned" Besan flour (ex: Kalustyans in NYC). I don't know why someone would buy that when you can brown it yourself.

Do you have any recipes in mind Gardener? Please share if you find something good with besan flour. My friend and I ground a whole lot of it and I need to use it sooner rather than later

The Besan flour is used to make pakoras. Mixed with wheat flour and other seasonings Besan flour is used to make Missi rotis.

That besan ladoo looks/sounds REALLY good!! How is that different than besan burfi?

Mmm burfi

I think burfi has some milk product in it? But one recipe I have for besan burfi doesn't have milk, but it does have coconut. I know! One is shaped like squares and the other is round! Eureka I've got it

Either way, now I have a huge craving for sweets! I really have to stop reading IM before bed!

Urad Dal flour is new to me, however dal itself is soaked in water and then made a paste out of, used for making Vada, Chilla (Indian Pancake), and lot of other things..

OMG... I think I just died and went to Heaven!!! I split it in 3 parts, one is plain, one is with coconut, one is with cashews. Next time, I think I'll make some with both coconut & cashews together. And then I'll have to make some with almonds... any other suggestions?
