Madhur's book seems to be very popular. Sanjeev Kapoor also has his fans.
I suggest you pick up both.

If you are talking vegetarian, there is an excellent cookbook that is used as a reference book in some Indian schools, and for the Craftsmanship Course in Cookery. It is called 'Vegetable Delights - 650 Original Inidan Recipes' by Malini Bisen, pub by Wilco Publishing House, 33 Ropewalk Lane, Fort, Mumbai. 60rs. It is widely available throughout India.

Tim in Ireland.

I bought Madhur's book - A taste of India as a reference - for the photos & gr8 tales- they are worth the cost alone. Then there are those mouth watering recipes .....

Amma's Cookbook : From Indian Village to Internet
Have tried out a couple of recipies so far from Amma's and they did turn out quite authentic.

I first learned how to cook from Madhur- so she will always hold a special place in my heart. I have a few of her books and they are all stained with ingredients from the kitchen and over-use. I use her for reference and I look on the internet these days too. I started using a pressure cooker so I could make good indian food without having to plan ahead. I am making a balinesse sweet and sour tonight, inspired by madhur's recipe...YUMMMMMM
