newbie curd question
Is it yogurt?

In most cases the yogurt that you buy from the milk section in US grocery stores is Curds. In the US, frozen yogurt is not curdled milk -- but is used to denote ice cream with a fat content less than a specific threshold.
From the Dictionary: yo·gurt also yo·ghurt or yo·ghourt A custardlike food with a tart flavor, prepared from milk curdled by bacteria, especially Lactobacillus bulgaricus and Streptococcus thermophilus, and often sweetened or flavored with fruit. curd 1. The part of milk that coagulates when the milk sours or is treated with enzymes. Curd is used to make cheese. 2. A coagulated liquid that resembles milk curd |

Thank you very much, wow you answered so quick.
I just wanted to make sure that if I used plain yogurt from the store to make raita I wouldn't be kicking myself later. By the way... just to take more advantage of the wonderful culinery knowledge here... if I want to make tomato onion raita, what do I have to add (i.e. what's non-optional) besides sliced tomatos, sliced onion, and curd? Are there some spices that should be added when making a simple raita? |

Add 50% sour cream + 50% yogurt/curd to get a close to authentic flavor, you could also add cilantro, mint and diced jalapeno to kick it up a notch. Goes well with biryani, it's called 'buraan' in Hyderabad.

You could add a pinch of "chaat" masala, red-chilli powder or jeera powder too...if you'd want the raita to go thicker, you could add some grated cucumber..

must be a maharashtrian with surname - tupkari (where tup is a salted lassi kindof drink made of dahi(curd) & kari is like 'a person who does that', which means tupkari is a person who makes tup.
(a famous person with that surname is bhrung tupkari a lyricist) |

Hey,
When sugar is added to curd, it tastes really good. If you put the sweetened curd into a mixie, and whip it, it becomes sweet lassi. |
