Mustard seeds... light & dark
What is the difference as far as which foods call for the light vs. the dark seeds?

There are black, brown and white or yellow seeds
I don't think I've ever come across an Indian recipe which uses white mustard seeds - usually it's black/brown seeds which have a more bitter, earthy taste and less of the pungent mustard flavour of white seeds. White seeds are used for pickles and hot dogs and dijon |

Yellow mustard seeds are used in Bengali and East Indian recipe for preparing fish in mustard sauce. They are referred to as 'rye'.
I have never seen the white seeds used in an Indian dish. They almost look similar after cooking though tastes different. |

I would have to agree that the white seeds taste different... actually rather tasteless in comparison to the black seeds.
