Mustard seeds... light & dark

What is the difference as far as which foods call for the light vs. the dark seeds?

There are black, brown and white or yellow seeds

I don't think I've ever come across an Indian recipe which uses white mustard seeds - usually it's black/brown seeds which have a more bitter, earthy taste and less of the pungent mustard flavour of white seeds.

White seeds are used for pickles and hot dogs and dijon

Yellow mustard seeds are used in Bengali and East Indian recipe for preparing fish in mustard sauce. They are referred to as 'rye'.
I have never seen the white seeds used in an Indian dish.
They almost look similar after cooking though tastes different.

I would have to agree that the white seeds taste different... actually rather tasteless in comparison to the black seeds.
