Thanks for posting this site. I am going to have to find a source for Indian spices in Oklahoma (good luck) and try those recipes out.

Thanks for the site. There is an Indian grocery in almost every small town. If I get lazy I go to Trader Joe's and get precooked..

You are right. There is a store about 4 miles from my house. I'll check it out.

As in all recipes, you do not have to have all the ingredients handy. You may use substitutes or play around with your own flavoring. For example, if living in Italy, Paneer may be hard to come by. However, another cheese such as Mozzarella will be available in every store. Just make sure you do not fry Mozzarella like you would Paneer and expect Mozzarella to melt thouroughly, unlike Paneer. Substitute if you have to. Do not let a lack of a spice or ingredient keep you away from good food! And the more experienced you become, the more create you can be with your own masalas!

Just try not to underdo the flavoring (spices) and make it taste like this: And make sure not to overdo the flavoring and making it taste like this: But if one of these two do happen, it's okay. Experiment again. You will soon create something that tastes like this:

I totally agree with you. People are very often obsessed about a recipe's ingredients and quantities whilst i am far more interested in the methods of cooking. I think that cooking is far more about 'how' than 'what'

Also, for those that are really away from any Indian stores, there is the option of mail order and Internet stores that specialize in Indian food and spices.

The small store in my neighborhood had all of the spices I needed as well as paneer. Time to experiment.
