being diabetic (no refined flour breads allowed!), i'm seeking for a list of wholegrain (wholewheat) flour breads one can have in india, especially these made in tandoor oven.

also is there any use of buckwheat flour in indian cuisine?

Tandoori Roti, Parantha, missi roti would be good. Stay away from Naan, Rumali Roti, Kerela Parantha..

Just curious. Why mix maida and atta? To make it soft? My aunt makes the yummiest and soft for a couple of days chapatis with only atta.

In South India you can ask for Chapatis, which is made from whole wheat flour but it will be a little oily.

Does anybody know if there are any differences in the preparation methods of Bakarkhani & Sheermal? Or are they basically the same bread?

To paraphrase Will Rogers, I never met a naan I didn't like. It's the accompaniment that varies, and IMHO nothing beats grilled fish. So I guess that means Goa.

Ahhhh...Naan.....one of my favorites. I can understand why people return to a good eating spot because of the naan alone. (as well as a good paratha, but that should be another thread, all on it's own) Back in '05 I posted the following in the hotels section: and it was this place I had the best naan in Rajasthan, IMHO, in Jodhpur.

"On the Rocks, a restaurant near the Ajit Bhawan hotel, has great food and ambience. It was chilly at night in Jan., but this place has those nice little campfires close to the tables. Best tandoori I had in Rajasthan. Veg options were also way above average. Worth the price."
