Ideas for sour milk?

We were out of town a few days and came home to a half gallon of slightly sour milk. I was wondering if there's something that can be done with the milk other than pouring it down the drain?

If the milk has separated into curd and whey, then drain it to make home made ricotta cheese.

It's not yet separated. Is there a way to speed up the process?

Just boil the milk. If it does not separate, I don't think the milk has soured.

If the milk has not yet seperated, boil it and add 1/2 tsp of lime juice, this will cause it to seperate.

Now you have paneer ( milk solids) & whey
Paneer can be used to make yummy paneer bhurji / korma
Whey you can use to Knead the flour to make hot chappaties to eat with Paneer bhurji

Enjoy

Or take it a step further. Drain the curds for a few hours, knead it smooth, roll into balls and boil in sugar syrup. The result is a sweet called rosgulla.
