I want to cook my wife a meal...

....on saturday before we come to India. I think we'll mainly be in Himachal Pradesh and Jammu & Kashmir. Is there a meal from around there that you recommend I try cooking? we both eat meat and I don't have any massive clay ovens in council house.

Is this to prepare yourselves for India or to get a taste for the local fare ?

Either way, I'd be suggesting something like momo's (Tibetan dumplings) cooked in a steamer.

bit of both really. we've always been indian food fans. my wife teaches in a predomanatly indian primary school and as soon as all the parents heard she was going to india they came in with arm fulls of home cooked indian food. i'm still making my way through it two days later.

Kashmiri mince rolls in curry could be easy to do. The spices you add to your mince balls are red chilli powder, ginger powder, asafoetida (only a pinch),aniseed, black cardamon seeds crushed, whole Bengal gram powder (2tbspn) and 3 tbspn yoghurt, pinch of salt. Go easy on the spices - you cook the balls in oil (not deep fry).
Make a curry sauce using red chilli, ginger, aniseed, garam masala powders, cloves and bayleaves. You need 2 tbspn yoghurt and around a cup of water - bring to boil and stir until thickening.
