I wonder how easy it would be to make it? For example, do you suppose it would work to run a coconut through the juicer to extract the juice then refrigerate it and skim the oil off of it?

If I am not mistaken coconut oil is made from Copra(Mature cocunut dried in the sun till all moisture is gone), then crushed in a extactor to get the oil. what you would get if you run cocunut in a mixie/grinder will be coconut milk and not oil!

I'm reading about it on the internet and the sites say to boil the coconut meat. Wouldn't that then be processed oil or is that how ALL the oil is made?

People in most of Kerala, and some parts of TN still use coconut oil. As far as the supermarket culture in many Indian cities go, its a question of the cheapest oil on offer, very often corn or sunflower oil. Coconut oil ought not to contain any animal fat. Coconut oil is also widely used in ayurvedic formulations, and is also a good skin emollient.
