Ghost vs Biria
Byronic and I are in agreement that goat-mutton simply tastes different in India and USA, no matter how it is cooked. Does anyone else notice this, or is it all in our heads

I thought the lamb in US was sheep meat. That definetly tastes different than the mutton (typically goat meat) in India. where do you buy your goat meat from in the US?

I'm rackin my brain to recall if I've ever had goat outside India ..... including dining in many fine restaurants in Toronto. Certainly if so - not enough to be able to discern between any taste and/or tenderness differences.

BJ, do you mean the goat/mutton in India is different than birria is here?
I have eaten birria here and in Guadalajara, and in Rajasthan. I cannot digest "locally grown" goat....thats a fact, or the birria in Guadalajara. I got the torsones from both places. Unlike India, where I had a tasty kebab....I think it was the bucket of spices, the smaller amount of "mutton" consumed, the absolutely pristine dining atmosphere of Rajasthan under the stars, the desert scrub wood smoke treatment...now that mutton went down easy! |

I am in complete agreement with you Bijapuri and Byronic. A 100%. No doubts at all. You couldn't be righter. How true...
The deccani bakra meat, which is the best ofcourse, is different from what you get elsewhere even in India. The US 'goat' which I continue to be conned into believing is the equivalent of bakre ka gosh is, imho, actually.. never mind. ![]() |

Goat definitely tastes different here than in other places...india included! I eat a lot of goat actually - goat curry and also some latin dishes with goat. It just tastes different - probably also what they're raised on. Man, now I'm hungry again!

I picked up Byronic from SFO after his epic 6 months in Indi. He lived with Muslim weavers in MP, ( http://chanderifilm.com/ ) so he surely had some goatish moments. On the way to SCruz, he ate a goat taco in Half Moon Bay. The verdict- No es la mesma!

when looking for desi mutton, might have some luck at Paki grocery stores that feature Halal meats. We have them in SFO area, so must be one or three in Socal. Dunno, never contemplated cooking it myself
