ever tasted balushahi

i was reading this thread and someone mentioned thin, crispy jalebis [one of my all time favorite sweets] - they taste best when warm

but has anyone ever tasted imarti [probably big brother to jalebi]?

or

have you heard about or tasted balushahi? it does not look like or taste like jalebi but it is another one of my favorite and there is only one shop in whole of delhi [that i know of] which makes delectable balushahis

Balushahi (OR is it Balushai) has gone out of fashion, due to high ghee contents, less presentabiliy and limited number of people who can make them good enough..

Imarti is cousin of Jalebi..but again soon fading away from Delhi..

Talking Ah, balushahi

Balushahi, when made well, is a total delight. It has to be light and flaky in texture...with the flavor of ghee, and a moderate degree of sweetness.

Have memories of great balushahi from G.Pulla Reddy Sweets in Hyderabad. However, too often, the balushahi at lesser stores is a goopy mess. If it has been sitting a while, the ghee congelates and creates a rather sickly taste.

In old Delhi or east Delhi try Kanwarji for good Balushahis. The sweet shops in chota bazar in Sahadra all used to sell quite good stuff, not sure about now.
