Cooking Lessons in several areas

I know there are old threads on this, but none of them is particularly long. You'd think it would be a hot topic given how foreign some of the cooking techniques and ingredients of Indian food are to many western cuisines. I'd love to do a day long cooking course with my wife and we were thinking Punjabi style cooking would be to our tastes, so Amritsar would be preferred, but we're keen to do whatever we can wherever we can.
We're going to Delhi, Uttaranchal, Rajasthan, Amritsar and Chandigarh, Mumbai and Kerala.
Anyone have any personal recommendations along that route?
