Learning how to cook properly involves a whole lot of practice, a good knowledge of how ingredients react and combine, and a touch of craftsmanship.
As steven_ber said, you'd do well to look for a good intense course of a few days with an excellent teacher who focuses on the fundamentals rather than assembling a series of recipes. Singer, you say you follow recipies to the letter and are always disappointed with the results. Is it just Indian cookery in particular you have a problem with, or do you find this generally? Reason I ask is that I was wondering where your recipies come from. Cookery is a science, and while some people never seem to "get it" it could be that your source of recipies is at fault. I know that when friends have asked for details of a dish, I have written instructions that I and my friends would understand, but that maybe others would not. If you have difficulty with your recipes generally, I suggest you try the epicurious site. The recipes are rated by people who have followed the instructions, so you can be sure that the higher rated ones actually work! |

Cooking Lessons in Chennai?
Does anyone have any recommendations for cooking lessons in Chennai? I'm looking for something that would be a few hours. I'll be staying in Chennai this January (2009).
I'm a fairly decent cook of South Indian food. I've learned from books, MIL and other family/friends. But, since I was not raised there, I always benefit from watching someone else cook, and coming up with new ideas. |

Same thing--- I'll be in Mumbai for about a week, first time in India. I am a professional chef. I would love to watch and learn in someone's home or even work at a restaurant. I am vegetarian and speak only english, french, spanish. Any suggestions would be much appreciated. Will check the local paper when I get there on friday. THANK YOU!

If you have a couple of hours while in Orchha there is a wonderful lady who does a cooking demo in her house. She speaks excellent English.

Hi,
I really can't remember better to phone her and ask she is super friendly. The cost of vegetables has gone up alot since I last visited her. He husband runs a little shop that is situated on the way to Orchha resort just before the bridge over the river. His shop is the first shop just past the little temple on the right there may even be a sign advertising cooking classes and henna painting. |
