Learning Indian Cookery

Cooking is one of my passions and the type of cooking i'm most passionate about is Indian Cooking.

I'm off to India for a couple of months over Jan Feb and was hoping to gain some insight into true indian cooking methods.

I was wondering if anyone had any recomendations on how i could experience and learn traditional Indian cooking whilst abroard, eg cooking classes, learning from locals, street vendors.

Cheers

I am thinking of doing the south for a month- Goa, Kerala, Mysore, Bangalore- then the North for a month- Varanasi, Jaipur, Deli, Rajastan.

No real definate plans yet. Was pretty much going to decide when i get over there.

Would you like to attend a formal class or learn from a family?

When you are in Jaipur (Rajasthan), please feel free to drop in. We'll work out something for you.

This is going to be a slightly off-tangent reply to your question but
I'd strongly recommend a book if you want to know true blue south
Indian cooking, Brahmin style! This is not to say, you should not
come down to India and learn cooking from different parts of the
country but the book is a small window into South Indian culture.
Even better than the book is of course someone actually teaching you
South Indian cooking!

Samaithu Paar[1] is a classic. For an interesting background into the
genesis of the book, check the newspaper story here[2]. Now, the book
is being reprinted with glossy pictures and silly stuff about pizza,
burgers, chips etc. Ditch that. Go for an older volume which is
printed on cheap paper which you can find in any Indian bookstore.
This will be about the size of a normal paperback. I believe there
are now 2 volumes one for daily food preparation and the other, what
needs to be prepared on special occasions like Pongal, Diwali etc.(I'm
not too sure whether there are 2 vols or 1 vol.) Samaithu Paar is the
Tamil edition while Cook & See is the english one. It should cost you
about Rs 100-120; if you're paying Rs 300+, you know for sure you're
getting the coffee table glossy version of the same.

You don't have to take my word for it; Read the newspaper link below
and you can decide for yourself. Even with the book, you'd need some
help with the ingredients and the measures mentioned. Just think of
the jaws dropping to the floor when you casually tell the southie out
there in Adelaide or Sydney what *they* need to do on a religious
festival day! If you added 'acharam/madi'[3] to the things they need
to do; finito! You got them knackered!

Give it a shot, you won't regret it.

cheers,

Digital Drifter

Footnotes:
[1] Translated into english as "Cook & See" though it
should be more accurately translated as "Try Cooking" in my not so
humble opinion. Samaithu, Samaiyal translates as cook & cooking while
paar translates to see, attempt and/or try.

[2] http://www.hindu.com/thehindu/mag/20...1700190700.htm

[3] Difficult to explain but it roughly means the practices you need
to follow when doing certain activities like praying, cooking etc.
For example the cooking hearth has to be cleaned everyday, fresh water
drawn from the well has to used, things like these...

There must be a cooking channel on TV/cable in India by now. Is there?
