Well, my original question was to find places to eat at for all the stops along my itinerary: it is just that the Delhi folks have been more forthcoming and helpful in terms of numbers than some of the other places, and so I have many more recommendations for Delhi than for say Visakhapatnam or Kochi. (And thanks to everyone who has contributed so far, including those mentioned above )

Here's my full list again:
  • Delhi (4 days)
  • Jaipur (2 days)
  • Agra (1 day)
  • Kolkata (4 days)
  • Bangalore (3 days)
  • Kochi (3 days)
  • Chennai (4 days)
  • Visakhapatnam, (4 days) and of course
  • Hyderabad (11 days)

Honestly, I appreciate all the input, although I will most likely not go to any of the South Indian or the "western" restaurants in Delhi; as I said earlier, what I am looking for would be places to eat at in each of the locations that serve food true to that region (or a region I won't get to on this trip, hence the request for Gujarati places).

On the other hand, this thread will potentially be useful to many other travellers in future, and their priorities might well be different from mine, so I love all the suggestions even if I do not find them directly applicable to my current needs.

And yes, I am still ravenously collecting veg. speciality and restaurant suggestions! Anyone with ideas for Jaipur and Agra?

I am reluctant to go to five star hotels for their restaurants, but I don't want to be overrun by touts while trying to eat something either.

Though it's quite a trek from the usual lodgings area in Agra, there is an Osho restaurant . . . Zorba the Buddha, that is amazing. Near the top of my eating experiences in India.
