Nuts are pretty good. But a few Bananas a day while definitely keep the weight up if not add to it.

I always lose weight in India, and my wife always gains weight.

That's because my lifestyle in India is more energetic than it is in the UK, and hers is less energetic than it is in the UK.

just a thought, If you are feeling ok then maybe its not actual 'body fat' that you need to increase to reach your ideal weight - maybe some resistance exercise to build muscle rather than food to build fat would increase your weight to 64-65. I'm not saying you need to start body building but a little hypertrophy may be what you need.
also, just a thought on the metabolism. allthough it does run in your family there are ways of stimulating and massaging the thyroid gland (which regulates the bodies metabolc rate) like shoulderstands and other asanas in a yoga class. i would recommend taking a yoga class and if the yoga instructor is fully qualified and has studied properly then he or she will know what asanas to give you.

Parantha would be pretty good for putting on weight - can get them filled with potato or paneer which makes them carb-tastic, plus they usually come with some butter or oil on top (they still taste good though!)
I don't really need to make an effort to put on weight, but I can't resist these for breakfast!
